A journey through time - exploring how people in the UK have preserved food over the centuries. From ancient methods using salt and smoke to the rise of refrigeration and beyond, our ways of keeping food fresh have always reflected our environment, our technology, and our way of life. It has evolved from necessity to convenience to sustainability. Each method tells a story — not just of what we ate, but how we lived, travelled, traded, and adapted. As we look to the future, blending ancient wisdom with modern technology may be key to feeding ourselves more responsibly.
The four page handout which you will be given on the day gives details of some of the methods of preservation that you can use in your own home, together with recipes for jellies and pickles, Medieval beef and red wine stew, potted shrimp, a wartime omelette, kimchi and kombucha.
